Meet Josie, Owner of Mi Chaparrita
Josie Rodriguez comes from the state of Michoacán, Mexico, and now calls Madras, Oregon, home. As a longtime cook, locals know her from seeing her around Central Oregon, cooking and selling food at various events and outside of different Hispanic establishments. While vending at different events and locations had its exciting moments, there were times when Josie wished she didn't have to work outside, especially during the harsh winter months. That's when the dream of having her own food truck was born.
On October 18th, 2025, that dream became a reality! Mi Chaparrita officially opened its doors, and the community came out to celebrate with us. Here are a couple of images from that special day.
Josie currently works two jobs and hopes that one day she can do the truck full-time. She is incredibly grateful for everyone who has supported Mi Chaparrita and continues to bring authentic Mexican flavors to the Madras community every day.
